How do I turn off the intensly annoying compact list feature in the Start menu? Right now, when I go into start/programs, I only see the more recently used programs, I have to click on a botton at the bottom of the list to see all of the items I've placed in my start menu.

Right click the start button, bring up Properties. On the Start Menu tab, change to classic start menu if you haven't already, then click Customize. Under the list of Advanced Start Menu Options, the very last item will be Use Personalized Menus. Uncheck it to see your full start menu all the time.
